It is thought to be a variant or dialectal spelling of the more common German name "Jörger" or "Görger," which itself is derived from the personal name "Georg" or "George."

One of the earliest recorded instances of the name IOERGER can be found in a 16th-century church register from the town of Bamberg, in what is now the German state of Bavaria. Here, a certain "Hans IOERGER" is listed as a resident of the town in the year 1542.
