The surname Sabourin originated in France during the Middle Ages. It is derived from the Old French word "sabourin," which referred to a type of small drum or tambourine used in medieval music and dance. The name likely emerged as a descriptive nickname for someone who played this instrument or was associated with it in some way.

One of the earliest recorded instances of the Sabourin name can be found in the 13th-century cartulary (collection of charters) of the Abbey of Saint-Père in Chartres, France. This document mentions a certain "Hugues Sabourin" who was a resident of the nearby village of Cormainville.

In the 14th century, the name appears in various tax rolls and legal documents from the regions of Normandy and Île-de-France. For example, a "Jehan Sabourin" is listed among the residents of the village of Évreux in the Normandy Subsidy Roll of 1384.

During the Renaissance period, the Sabourin family seems to have been particularly concentrated in and around the city of Rouen in Normandy. A notable bearer of the name from this era was Pierre Sabourin (c. 1490 - c. 1560), a wealthy merchant and alderman who served as the mayor of Rouen in 1549.
