The surname Schoborg is of German origin, first appearing in records from the late 15th century in the regions of Bavaria and Saxony. It is believed to have derived from the German words "Schob" meaning a bundle or sheaf, and "borg" referring to a fortified place or castle, suggesting the name may have originally referred to someone who lived near or worked at a fortified granary or storehouse.

One of the earliest known records of the name appears in a 1487 document from Regensburg, Bavaria, which mentions a Michael Schoborg as a landowner. In the 1530s, a family by the name of Schoborg is recorded as residing in the town of Grimma, near Leipzig in Saxony.
